There is an option for each of the games to be able to choose whether you want the Move Highlighting to be on or not.
Some players find it makes it a bit too easy as it takes away some of the challenge of spotting the potential moves. Others prefer it as it allows them to concentrate on the choices to make, rather than the scanning.
To adjust the Move Highlighting setting for the game, tap on the title screen to start a game as usual, then select the Cog icon on the game screen so expand out the game settings.

The Cog will open out the game settings, where you can choose any of the settings you'd like for that particular game: The Move Highlighting option is normally towards the bottom for each game, but for some games which have more options available, you may need to scroll down a little way before you can see it.
None means that there will be no highlighting at all.
Useful Moves will make it only highlight cards that the game thinks will give you possible progress towards completing the game.
All will highlight any of the possible moves, which leaves it up to you to choose which will move you forwards and which would move you back!

This setting is saved for each game, and will be remembered next time you start that game, so you don't need to change it every time.
You can have it with different settings for different games, and it will remember your preference for each. For instance you might have it show Useful Moves for Klondike, but have it switched off altogether for Spider, or any other combination you choose!
